Bean Salsa

Yesterday was my nephew's baptism. A wonderful family event, followed by a BBQ at my BIL's house.
I brought fresh Bean Salsa.

BEAN SALSA
1 (15 oz.) can black beans
1 (15 oz.) can black eyed peas *I used red beans
1 (11 oz.) can white corn *I used frozen white corn
3 roma tomatoes, chopped
1 green pepper, chopped
1/4 medium red onion
1/2 C. bottled Italian dressing
Thoroughly drain beans and corn. In a large bowl combine all ingredients.
Serve with tortilla chips.

I marinated the salsa overnight, and took directly from the refrigerator and placed in my Cooler/ Cooker bag.

I placed the lid on top and put the bag in the back seat of our car.
It sat for over 2 hours before I brought the salsa out for the luncheon.
The dish was still as cold as when I placed it in the bag.
I love these bags! Just perfect for when you want to take food to a gathering.

Mmmm... love bean salsa! But one question... where are the jalapenos? Love them for a little spice. What a cute boy! Congratulations, Jacobs!

I love bean salsa. Love it. Do you ever put cilantro in it? Must try your recipe as I have found from previous posts and things I have made from them that you have the most delicious recipes!
